In spring the new shoots of the olive trees need to be cut back to allow light and air into the crown. So that there will be flowers and later olives throughout the crown!
Beginning of June and after each rain until the harvest the olive trees have to be sprayed with white clay, kaolin. So that the olive fruit fly does not spoil the olives!
The plan is to order the windows & doors, fill the wood framing of the outer walls with straw bales and to finish the outer side with hydraulic lime cement and the inner side with cob.
Between October 15 and November 15 is early harvest time for the olives in this area. With early harvest the acidity has been below 0.3 and there was only a hint of bitterness. Even that some people loved the bitterness of the first olive oil!
The plan is to finish the interior: the compacted soil floor, upstairs flooring, wood partitions at the bathrooms & upstairs bedrooms, and the wooden stair.
